Last week, our Crackers kitchen team had the pleasure of visiting Farmer Peter, one of our key local suppliers who is instrumental in bringing the freshest ingredients to your table. Let us take you behind the scenes of this delightful visit and share some of Peter’s secrets that make our dishes truly exceptional.
Upon arrival, Peter welcomed our team with his warm smile and vast knowledge of sustainable farming. He began the tour by showing us around his herb gardens, where he grows a variety of herbs we use for decoration, including red basil tips, red amaranth leaves, and pea sprouts. These vibrant and flavourful herbs add the perfect touch of elegance and taste to our dishes.
Next, Peter introduced us to his beautiful collection of blossoms. From the delicate garlic blossoms to the bright tagetes flowers and stunning cornflowers, each bloom is a testament to his dedication to quality and sustainability. These blossoms not only enhance the visual appeal of our plates but also add unique flavours that delight our guests.
One of the highlights of our visit was exploring Peter’s tomato varieties. Each year, Peter grows a range of tomatoes, and the excitement of receiving the first batch of the season is unparalleled. This week, we will start incorporating these tomatoes into our dishes, using them in soups, fish dishes, and fresh starters. The burst of flavour from these locally-grown tomatoes is something you won’t want to miss.
Peter doesn’t just stop at herbs and blossoms. He also provides us with a variety of vegetables, such as carrots, rondini, and celeriac, which we use for our side dishes. These vegetables, harvested at the peak of their freshness, ensure that our dishes are not only delicious but also nutritious.
Starting next week, our “seasonal vegetables” will be labeled as “Krielower Vegetables,” proudly highlighting our collaboration with Peter and showcasing our dedication to working with local producers.
